Ingredients

  • 4 eggs
  • 350 g cooked spaghetti
  • 3 large garlic cloves, mashed and chopped
  • 1 head broccoli, cooked mashed and chopped
  • 12 cup of cooked small cocktail shrimp instead broccoli
  • 12 teaspoon thyme or 12 teaspoon parsley
  • 3 tablespoons olive oil
  • 2 tablespoons romano cheese or 2 tablespoons parmesan cheese

Method

  • In a large bowel mix the eggs, garlic, thyme/parsley, broccoli/shrimp, 1 tablespoon cheese and let sit for 5-10 minute.
  • If the spaghetti is still hot run it under cold water.
  • When the pasta is cooled mix it well with the egg mixture.
  • Heat the olive oil in a large frying pan until very hot but not smoking.
  • Add the pasta mixture and fry up until golden crisp and flip over to the other side and top with one tablespoon of cheese.
  • The omelet texture should be cooked enough so you will need a pizza cutter to cut up like pizza slices.
  • Serve with additional cheese on the side.
  • You can serve with ketchup, however, once you become good at it I've had people say that the ketchup is sacrilegious, although the kids like it!.
