Ingredients

  • 1 pound red kidney beans
  • 1 ham bone with generous amount of meat
  • 1 bay leaf
  • Cumin pwdr to taste
  • Dash red pepper
  • 1 lg. onion, minced
  • 1 pound pepperoni, sliced
  • 1 clove garlic, minced

Method

  • Wash and pick over beans, cover in cool water and soak overnight.
  • Cook pepperoni, onions, garlic till slightly brown, add in beans and water in that they have been soaked then ham bone and more water to cover, bay leaf, red pepper and cumin pwdr to taste.
  • Cook slowly for several hrs.
  • Serves 8.
  • Corn bread goes well with red beans.
