Ingredients

  • 1 tsp. flour
  • 1 (3 lb.) smoked boneless pork shoulder butt
  • 1 (27 oz.) can Libby's sauerkraut, drained
  • 1/4 c. firmly packed brown sugar
  • 1 medium apple, peeled and diced
  • 1/2 to 3/4 tsp. caraway seed
  • 1/4 tsp. pepper

Method

  • Place flour in a 14 x 20-inch cooking bag. Shake to coat inside.
  • Place pork in bag. Close with twisted tie. Place slits in top of bag.
  • Bake at 350° for 2 hours.
  • Remove from oven and open bag.
  • Combine remaining ingredients.
  • Mix well. Spoon over and around pork.
  • Re-tie bag and bake for 40 minutes longer.
