Ingredients
- 1 1/2 pounds small red potatoes
- 2/3 cup fat free milk
- 2 tbsp extra virgin olive oil or butter
- 1/4 c. shredded fresh Parmigiano Reggiano cheese
- 1/2 tsp salt
- 1/2 tsp fresh ground black pepper
Method
- 1. Place potatoes in a large saucepan and cover with water, bring to a boil. Cover, reduce heat and simmer 15 mins or until potatoes are tender.
- 2. Drain potatoes well, return to pan. Add milk and olive oil to hot potatoes and coarsely mash. Fold in cheese, salt and pepper.
