Ingredients

  • 1-1/2 c. sugar
  • 2 Tbsp. cocoa
  • 3/4 stick butter
  • 3 eggs
  • 4 Tbsp. flour (heaping)
  • 1-1/2 c. sweet milk
  • 1 tsp. vanilla
  • 1 tsp. cream of tartar

Method

  • Into skillet, place sugar, flour, cocoa, milk, butter and vanilla and cook until thickened.
  • Add well beaten egg yolks, very rapidly.
  • Pour into baked pie crust and top with egg whites that have been beaten until peaks stand.
  • When peaks stand, add 4 tablespoons sugar and cream of tartar and beat again before putting on pie.
  • Brown in moderate oven.
