Ingredients

  • 2 (20 ounce) packages Simply Potatoes Diced Potatoes with Onion
  • 2 tablespoons chopped cilantro
  • 1 medium bell pepper, diced
  • 4 stalks green onions, chopped
  • 2 tablespoons sour cream
  • 2 tablespoons verde salsa
  • 24 ounces small peeled frozen shrimp
  • 2 tablespoons butter
  • 2 limes, juice of
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 1 cup milk
  • 2 ounces habanero monterey jack cheese, grated
  • 2 ounces gruyere cheese, grated

Method

  • Begin cooking the potatoes in a 12 inch skillet with a little oil in the bottom of the pan.
  • Cover and let cook, stirring occasionally until the potatoes are starting to brown, about 12 minutes.
  • In another skillet, melt the butter and combine with lime juice.
  • Stir in the frozen shrimp and cover until shrimp is thawed, about 5 minutes.
  • In a sauce pan combine milk, flour, and butter and heat on medium until the sauce begins to thicken.
  • Remove from heat and quickly whisk the grated cheese into the sauce.
  • Layer the potatoes, shrimp, and sauce with the remaining ingredients into two bowls and enjoy!
