Ingredients

  • sweet potatoes
  • 1 c. brown sugar
  • 2 Tbsp. cornstarch
  • 1/2 tsp. salt
  • 1/2 tsp. shredded orange peel
  • 2 c. orange juice
  • 1/2 c. raisins
  • 6 Tbsp. margarine
  • 1/3 c. dry cooking sherry
  • 1/4 c. chopped walnuts (optional)

Method

  • Cook potatoes in boiling water with salt just until tender; drain.
  • In saucepan, combine brown sugar, cornstarch and salt. Blend in orange peel and orange juice; add raisins.
  • Cook, stirring constantly, over medium heat until thickened and bubbly. Cook 1 minute more, add butter, sherry and walnuts.
  • Stir until butter melts.
  • Pour over potatoes; bake at 325° for 30 minutes.
