- sweet potatoes
- 1 c. brown sugar
- 2 Tbsp. cornstarch
- 1/2 tsp. salt
- 1/2 tsp. shredded orange peel
- 2 c. orange juice
- 1/2 c. raisins
- 6 Tbsp. margarine
- 1/3 c. dry cooking sherry
- 1/4 c. chopped walnuts (optional)
Method
- Cook potatoes in boiling water with salt just until tender; drain.
- In saucepan, combine brown sugar, cornstarch and salt. Blend in orange peel and orange juice; add raisins.
- Cook, stirring constantly, over medium heat until thickened and bubbly. Cook 1 minute more, add butter, sherry and walnuts.
- Stir until butter melts.
- Pour over potatoes; bake at 325° for 30 minutes.
