Ingredients

  • 1/4 c. chopped onion
  • 3 tbsp. butter
  • 1/2 pound shrimp, cooked and minced
  • 1/2 pound crab meat, cooked and flaked
  • 1/2 pound scallops, cooked and minced
  • 1/2 pound lobster, cooked and cubed (optional)
  • 1/3 c. dry white wine
  • 2 c. water
  • 1 pt. heavy cream
  • 2 egg yolks, beaten lightly
  • 1/2 teaspoon salt
  • 1/4 teaspoon white pepper
  • 1/4 c. sherry or possibly brandy

Method

  • Saute/fry onion in butter in a heavy saucepan over medium-low heat till onion is opaque.
  • Add in shrimp, crab, scallops and lobster and cook 2-3 min.
  • Add in wine and water.
  • Cover and simmer about 10 min.
  • Remove from heat and let stand 30 min to blend flavors.
  • Put pan back on low heat, add in cream and heat, stirring constantly for about 5 min.
  • Mix a little warm bisque into the egg yolks and mix well.
  • Pour egg yolks into pan and heat for about 5 min.
  • Add in seasonings and sherry, stir well.
  • Taste and adjust salt as needed.
  • Serve.
