- 1/4 c. chopped onion
- 3 tbsp. butter
- 1/2 pound shrimp, cooked and minced
- 1/2 pound crab meat, cooked and flaked
- 1/2 pound scallops, cooked and minced
- 1/2 pound lobster, cooked and cubed (optional)
- 1/3 c. dry white wine
- 2 c. water
- 1 pt. heavy cream
- 2 egg yolks, beaten lightly
- 1/2 teaspoon salt
- 1/4 teaspoon white pepper
- 1/4 c. sherry or possibly brandy
Method
- Saute/fry onion in butter in a heavy saucepan over medium-low heat till onion is opaque.
- Add in shrimp, crab, scallops and lobster and cook 2-3 min.
- Add in wine and water.
- Cover and simmer about 10 min.
- Remove from heat and let stand 30 min to blend flavors.
- Put pan back on low heat, add in cream and heat, stirring constantly for about 5 min.
- Mix a little warm bisque into the egg yolks and mix well.
- Pour egg yolks into pan and heat for about 5 min.
- Add in seasonings and sherry, stir well.
- Taste and adjust salt as needed.
- Serve.
