Ingredients

  • 12 cup butter
  • 12 cup whole wheat flour
  • 1 teaspoon salt
  • 14 teaspoon ground pepper
  • 3 cups whole milk
  • 3 cups ham, cubed
  • 1 large onion, chopped
  • 2 large green peppers, chopped
  • 5 cups potatoes, skinned and sliced
  • 12 cup sharp cheddar cheese, shredded

Method

  • preheat oven to 350 degrees.
  • melt butter in large pot (I use 8qt.
  • size) over low heat.
  • blend in flour, salt, pepper.
  • cook until browned, stirring constantly.
  • add milk slowly, stirring constantly, 1 minute.
  • cook until thick and bubbling, stirring constantly.
  • remove from heat.
  • fold in ham, onion, green pepper, potatoes and cheese.
  • pour into buttered 13x9x2 casserole dish.
  • place on foil covered tray to prevent spills.
  • bake for 30 minutes covered with foil.
  • uncover and bake for 1 hour or until browned and bubbling.
  • remove from heat and let stand for 10 minutes before serving.
