Ingredients

  • 8 top-quality Italian pork sausages
  • 500g red grapes
  • 2 red onions, halved and cut into wedges
  • 2 tbsp extra virgin olive oil
  • 100ml white wine or apple cider
  • 500g red radicchio leaves
  • 500g rocket leaves or baby
  • spinach
  • Sea salt and pepper
  • 2 tbsp walnuts, roughly chopped

Method

Heat the oven to 200C. Separate the grapes into small bunches. In a roasting pan, toss the sausages, grapes and red onion with the olive oil. Add the wine and bake for 45 minutes or until the sausages are browned, the onions are soft and the grapes are soft and juicy.

To serve, scatter the radicchio and rocket over four plates. Arrange the sausages, onions and grapes on top, breaking the onions up into "leaves" as you go. Season well, drizzle with a little extra olive oil, scatter with walnuts and serve.
