Ingredients

  • 1 1/2 lb. sausage of choice
  • 1 large onion, minced
  • 1 bell pepper, minced
  • 2 cloves garlic, minced
  • 1 lb. can tomatoes
  • 2 c. rice
  • 3 3/4 c. chicken stock
  • 2 c. seasoned ham, diced
  • 4 green onions, minced
  • 2 dashes Tabasco sauce
  • 1/8 tsp. thyme
  • 1 bay leaf

Method

  • Add salt, pepper, Tabasco, thyme and bay leaf to sausage and saute in oil, then add onion and bell pepper and simmer.
  • Add garlic, rice, tomatoes, chicken stock and ham.
  • Bring to boil. Reduce heat and cover.
  • Simmer 40 minutes.
  • Add green onions for last 10 minutes of cooking.
  • Serves 6.
