Ingredients
- 1 pound Red New Potaotes
- 2 Tablespoons Grapeseed Oil
- 2 Tablespoons Chopped Parsley
- 2 Tablespoons Chopped Tarragon
- 2 Tablespoons Chopped Thyme
- 3 cloves Finely Minced Garlic
- 1/2 teaspoons Salt
- 1/2 teaspoons Pepper
Method
- Preheat oven to 400°F. Scrub the red baby potatoes.
- In a bowl, combine grapeseed oil, chopped parsley, tarragon, thyme, minced garlic, and salt and pepper to taste. Add the red potatoes and coat potatoes completely with the herb mixture.
- Spread the potatoes on a cookie sheet to lay flat and cook for about 45 minutes. Turn the potatoes occassionally to crisp and cook completely. Check the potatoes by pricking with a fork after 45 minutes to see if potatoes are done. Additional time may be needed.
- Serve immediately.
