Ingredients

  • 3 gal. small red potatoes, quartered
  • 1 cup oil
  • 6-1/4 gal. baby spinach leaves or torn spinach leaves
  • 3-1/4 qt. red peppers, cut into thin strips
  • 3-1/4 qt. red onions, thinly slivered
  • 1-1/2 qt. OSCAR MAYER Bacon, crisply cooked, crumbled Rite Aid 2 For $7.00 thru 02/06
  • 1-1/2 qt. goat cheese, crumbled (optional)
  • 3-1/4 cups pine nuts, toasted
  • 1-1/4 gal. KRAFT Honey-Mustard Dressing

Method

  • Toss potatoes with oil in large shallow baking pan.
  • Bake at 400F for 10 to 15 minutes or until potatoes are tender and golden brown.
  • Meanwhile, place spinach on individual serving plates.
  • Arrange warm potatoes, red peppers and onions over spinach; sprinkle with bacon, cheese and pine nuts.
  • Drizzle dressing over salad or pour into small pitcher and serve on the side.
