Ingredients
- 2 cups cooked rice
- 1 1/3 cups milk
- 1/8 teaspoon salt
- 4-6 tablespoons sugar or1/2 cup brown sugar
- 1 tablespoon soft butter
- 1 teaspoon vanilla
- 2-4 eggs
- 1/2 teaspoon grated lemon zest
- 1 teaspoon lemon juice
- (1/3 cup raisins or dates)
- cake or cookie crumbs, crushed graham crackers, cinnamon & sugar
Method
- Preheat oven to 325°
- Combine first 6 ingredients, beat well
- Add lemon zest and juice
- Combine with rice lightly with a fork
- Butter a baking dish, cover bottom & side with crumbs
- Put rice in dish, cover top with more crumbs
- Bake pudding until well set - about 50 minutes
- Serve hot or cold with cream or fruit sauce
