Ingredients

  • 2 cups cooked rice
  • 1 1/3 cups milk
  • 1/8 teaspoon salt
  • 4-6 tablespoons sugar or1/2 cup brown sugar
  • 1 tablespoon soft butter
  • 1 teaspoon vanilla
  • 2-4 eggs
  • 1/2 teaspoon grated lemon zest
  • 1 teaspoon lemon juice
  • (1/3 cup raisins or dates)
  • cake or cookie crumbs, crushed graham crackers, cinnamon & sugar

Method

  • Preheat oven to 325°
  • Combine first 6 ingredients, beat well
  • Add lemon zest and juice
  • Combine with rice lightly with a fork
  • Butter a baking dish, cover bottom & side with crumbs
  • Put rice in dish, cover top with more crumbs
  • Bake pudding until well set - about 50 minutes
  • Serve hot or cold with cream or fruit sauce
