- 3 qt. tomatoes, peeled and chopped
- 2 c. chopped celery
- 2 c. chopped onions
- 1 c. green bell pepper
- 1/4 c. salt
- 3 small hot peppers (if desired)
- 2 c. granulated sugar
- 1/4 c. brown sugar
- 1 tsp. black pepper
- 1 1/2 tsp. pickling spice, tied in cloth
- 1 c. white vinegar
Method
- Combine vegetables and salt; let set overnight.
- Drain, but do not press down.
- Mix remaining ingredients and add to vegetable mixture.
- Bring to rolling boil, uncovered.
- Reduce to simmer for 15 minutes.
- Pack in jars and seal in boiling water process for 10 minutes.
- Yield: 5 or 6 pints.
