Ingredients

  • 3 qt. tomatoes, peeled and chopped
  • 2 c. chopped celery
  • 2 c. chopped onions
  • 1 c. green bell pepper
  • 1/4 c. salt
  • 3 small hot peppers (if desired)
  • 2 c. granulated sugar
  • 1/4 c. brown sugar
  • 1 tsp. black pepper
  • 1 1/2 tsp. pickling spice, tied in cloth
  • 1 c. white vinegar

Method

  • Combine vegetables and salt; let set overnight.
  • Drain, but do not press down.
  • Mix remaining ingredients and add to vegetable mixture.
  • Bring to rolling boil, uncovered.
  • Reduce to simmer for 15 minutes.
  • Pack in jars and seal in boiling water process for 10 minutes.
  • Yield: 5 or 6 pints.
