Ingredients
- 3 lb. potatoes
- 2 hard-cooked eggs
- 1/2 c. celery, diced
- 4 green onions, chopped
- 1/4 c. green pepper, diced
- 1/4 c. low-fat plain yogurt
- 1 tsp. mustard
- 1 tsp. vinegar
- pepper to taste
- 1/2 tsp. salt
Method
- Boil potatoes in water until tender, about 20 minutes.
- Drain and cool.
- Peel and cut into cubes; combine remaining ingredients and mix into potatoes.
