- 4 cans light red kidney beans
- 1 large onion, chopped
- 2 cloves garlic, chopped
- 1 1/2 lb. Hillshire Beef Sausage (or any lean sausage)
- 1 tsp. salt
- 1 tsp. black pepper
- 1 tsp. red ground pepper
- 2 tsp. Zatarain's Creole Seasoning
- 2 bay leaves
Method
- Cook sausage in oven & set aside. Cook beans, onion, garlic, and seasonings 20 minutes. Add sliced sausage plus 1 Tbsp. sausage fat to bean mixture. Simmer for about 45 minutes. Serve over rice. Serves 7 to 8. I like cornbread with this.
