Ingredients

  • 4 cans light red kidney beans
  • 1 large onion, chopped
  • 2 cloves garlic, chopped
  • 1 1/2 lb. Hillshire Beef Sausage (or any lean sausage)
  • 1 tsp. salt
  • 1 tsp. black pepper
  • 1 tsp. red ground pepper
  • 2 tsp. Zatarain's Creole Seasoning
  • 2 bay leaves

Method

  • Cook sausage in oven & set aside. Cook beans, onion, garlic, and seasonings 20 minutes. Add sliced sausage plus 1 Tbsp. sausage fat to bean mixture. Simmer for about 45 minutes. Serve over rice. Serves 7 to 8. I like cornbread with this.
