Ingredients

  • 1 lb. dry red beans or dry red kidney beans
  • 6 c. cold water
  • 6 c. hot water
  • 1 lb. meaty ham bone
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 bay leaf
  • 1/4 to 1/2 tsp. ground red pepper
  • 1 lb. smoked sausage (bite size pieces)

Method

  • Rinse the beans.
  • In a large Dutch oven cover beans with the 6 cups water.
  • Bring to boiling; reduce heat.
  • Simmer 2 minutes. Remove from heat.
  • Cover; let stand 1 hour.
  • (Or soak beans in water overnight in a covered pan.)
  • Drain and rinse beans.
