Ingredients
- 1 lb. dry red beans or dry red kidney beans
- 6 c. cold water
- 6 c. hot water
- 1 lb. meaty ham bone
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 bay leaf
- 1/4 to 1/2 tsp. ground red pepper
- 1 lb. smoked sausage (bite size pieces)
Method
- Rinse the beans.
- In a large Dutch oven cover beans with the 6 cups water.
- Bring to boiling; reduce heat.
- Simmer 2 minutes. Remove from heat.
- Cover; let stand 1 hour.
- (Or soak beans in water overnight in a covered pan.)
- Drain and rinse beans.
