Ingredients

  • 6 cups whole milk
  • 34 cup carolina rice
  • 1 cup heavy cream
  • 34 cup sugar
  • 3 egg yolks, beaten
  • 2 teaspoons vanilla
  • 14 teaspoon salt
  • 1 teaspoon cinnamon

Method

  • Rinse a medium saucepan with cold water (don't dry).
  • Pour in milk & bring to a boil over medium heat.
  • Stir in rice & return to a boil.
  • Reduce heat, and simmer, uncovered.
  • until rice is tender (about 55 minutes) stirring occasionally.
  • Meanwhile, in a small bowl combine cream, sugar, yolks, vanilla.
  • and salt.
  • Set aside.
  • When rice is tender, put a small amount of rice mixture in yolk mixture to temper and then add to the pot.
  • Heat to a slow boil.
  • Remove from heat.
  • and pour into a 2 quart dish.
  • sprinkle with cinnamon and enjoy!
