Ingredients

  • 1 can crushed pineapple
  • 1/2 c. coconut, shredded
  • 1 c. flour (self-rising)
  • 1 c. sugar
  • 1 c. milk
  • 1 tsp. vanilla
  • 1 stick butter or margarine
  • 1/2 tsp. cinnamon

Method

  • In 9-inch deep pan, melt buttermilk, flour, sugar, milk and vanilla.
  • Beat until blended.
  • Drain pineapple (save juice).
  • Pour flour mixture in butter.
  • Spread coconut, then spread pineapple. Do not stir.
  • Sprinkle cinnamon on top.
  • Bake at 375° for 45 minutes to 1 hour or until springs back when touched.
  • Pour pineapple juice over while hot.
  • Let cool; cut into squares. Serve with whipped cream.
