Ingredients
- 1 can crushed pineapple
- 1/2 c. coconut, shredded
- 1 c. flour (self-rising)
- 1 c. sugar
- 1 c. milk
- 1 tsp. vanilla
- 1 stick butter or margarine
- 1/2 tsp. cinnamon
Method
- In 9-inch deep pan, melt buttermilk, flour, sugar, milk and vanilla.
- Beat until blended.
- Drain pineapple (save juice).
- Pour flour mixture in butter.
- Spread coconut, then spread pineapple. Do not stir.
- Sprinkle cinnamon on top.
- Bake at 375° for 45 minutes to 1 hour or until springs back when touched.
- Pour pineapple juice over while hot.
- Let cool; cut into squares. Serve with whipped cream.
