Ingredients

  • 1 Tbsp. butter
  • 4 flour tortillas
  • 1/3 c. grated Cheddar cheese
  • 2 green onions, diced
  • 1 or 2 Tbsp. picante sauce
  • salt and pepper to taste
  • fresh cilantro leaves (optional)

Method

  • Heat butter in a skillet.
  • Place 1 tortilla in the skillet. Sprinkle with half the cheese, half the diced onion, picante sauce and seasonings to taste.
  • When the cheese has melted and the tortilla is lightly browned, cover with another tortilla.
  • Flip to brown the second side.
  • Remove from heat; cut the sandwich into quarters.
  • Keep warm in a low oven.
  • Arrange on a plate with refried beans on the side, shredded lettuce and diced tomatoes. Serve with guacamole and/or sour cream for dipping.
