Ingredients
- 1 Tbsp. butter
- 4 flour tortillas
- 1/3 c. grated Cheddar cheese
- 2 green onions, diced
- 1 or 2 Tbsp. picante sauce
- salt and pepper to taste
- fresh cilantro leaves (optional)
Method
- Heat butter in a skillet.
- Place 1 tortilla in the skillet. Sprinkle with half the cheese, half the diced onion, picante sauce and seasonings to taste.
- When the cheese has melted and the tortilla is lightly browned, cover with another tortilla.
- Flip to brown the second side.
- Remove from heat; cut the sandwich into quarters.
- Keep warm in a low oven.
- Arrange on a plate with refried beans on the side, shredded lettuce and diced tomatoes. Serve with guacamole and/or sour cream for dipping.
