Ingredients
- 3 eggs
- 1 c. sugar
- 1 tsp. lemon juice
- 1 tsp. baking soda
- 1 tsp. ground ginger
- 1 tsp. nutmeg
- 1/4 tsp. salt
- 3/4 c. all-purpose flour
- 2/3 c. canned pumpkin
- 1 c. nuts (optional)
- powered sugar
Method
- Beat eggs high speed 1 minute.
- Add sugar and lemon juice, beating well.
- Then add sugar, salt and spices.
- Fold in flour. Add pumpkin until done well. Pour on greased cookie sheet (sprinkle nuts).
- Bake at 375° for 20 minutes.
- Turn cake on towel (powdered sugar on towel).
- Roll up and let cool.
