Ingredients

  • BARS: 2 cups pumpkin, 4 beaten eggs, 1 cup vegetable oil (or applesauce), 2 cups flour, 1 cup brown sugar, 1 cup sugar, 1/4 tsp salt, 1 tsp each baking powder and soda, 1 1/2 tsp cinnamon, 1/2 tsp cloves, 1/2 tsp nutmeg
  • FROSTING: 3 oz softened cream cheese, 1/3 cup butter, 1/2 cup confectioners' sugar, 1/2 tsp vanilla, 1 1/2 tsp light cream

Method

  • BARS:
  • Blend the pumpkin, eggs and oil in a bowl and set aside. I another bowl, mix all the dry ingredients and then mix with the pumpkin mixture. Pour into a greased square cake pan and bake in preheated 350F oven for 25 minutes. Remove from oven and cool to room temperature before putting on frosting.
  • FROSTING:
  • Cream the cheese with the butter until smooth. Put in the sugar, vanilla and light cream. Spread on pumpkin squares.
