Ingredients

  • 1 cup vegetable oil
  • 2 cup sugar
  • 16 oz can pumpkin
  • 4 eggs
  • 2 cup flour
  • 2 tsp cinnamon
  • 1/2 tsp salt
  • 1 tsp baking soda
  • 2 tsp baking powder
  • 1 tsp cloves
  • 3 oz cream cheese
  • 3/4 stick margarine
  • 1/2 tsp vanilla
  • 1 tsp milk
  • 1 3/4 cup confectioners sugar

Method

  • beat together: vegetable oil, sugar, pumpkin and eggs.
  • blend well.
  • sift together: flour, cinnamon, salt, baking soda, baking powder and gloves.
  • add dry ingredients to pumpkin mixture.
  • pour mixture into greased 13x9 inch pan.
  • bake 35 mins at 350F.
  • frosting: beat together cream cheese, margarine, vanilla, milk and confectioners sugar.
  • frost over cooled pumpkin bars and sprinkle with nuts.
