Ingredients
- 2 1/2 c. self-rising flour
- 4 eggs, separated
- 1 c. crushed pineapple (8 oz.)
- 1 tsp. cinnamon
- 1 tsp. nutmeg
- 1 c. chopped pecans
- 2 c. sugar
- 1 1/2 c. oil
Method
- Combine flour, sugar, oil, egg yolks, pineapple cinnamon and nutmeg in large bowl.
- Beat egg whites until stiff peaks form. Fold into batter.
- Fold in pecans.
- Pour into a 10-inch tube pan. Bake at 325° for 1 hour and 10 minutes, or until cake tests done. Let cool in pan.
