Ingredients

  • 1 onion
  • 2 Tbsp. bacon grease
  • 2 to 3 carrots
  • 8 potatoes
  • 1 Tbsp. marjoram
  • instant potatoes (as required)
  • 1 bay leaf
  • salt
  • meat (leftover roast, Polish sausage or 4 to 5 hot dogs)

Method

  • Chop onion and brown in bacon grease.
  • Add peeled and diced potatoes.
  • Peel and slice carrots and add.
  • Cover in large pot with water and let boil with bay leaf, about 30 minutes.
  • Add meat and instant potatoes until broth thickens.
  • Bring to boil; add marjoram and let simmer for 5 minutes.
  • Salt to taste.
  • This soup tastes good with rye bread or corn bread.
