Ingredients

  • 8 ounces potato
  • 4 scallion finely minced
  • 2 serrano Chile, finely choppe
  • 1 teaspoon salt
  • 1 tablespoon lemon juice
  • 2 tablespoons coconut milk
  • 1 tablespoon cilantro chopped

Method

  • Cook Time:0:25 Boil potatoes in their skins; peel and coarsely mash them.
  • Combine all ingredients, except the coriander, in a shallow serving bowl.
  • Taste the mixture and add more salt or lemon juice if necessary.
  • Sprinkle coriander over the top.
  • Chill in the refrigerator until ready to use.
