Ingredients
- 8 ounces potato
- 4 scallion finely minced
- 2 serrano Chile, finely choppe
- 1 teaspoon salt
- 1 tablespoon lemon juice
- 2 tablespoons coconut milk
- 1 tablespoon cilantro chopped
Method
- Cook Time:0:25 Boil potatoes in their skins; peel and coarsely mash them.
- Combine all ingredients, except the coriander, in a shallow serving bowl.
- Taste the mixture and add more salt or lemon juice if necessary.
- Sprinkle coriander over the top.
- Chill in the refrigerator until ready to use.
