Ingredients
- 2 eggs
- 1 c. mashed potatoes
- 1/2 c. flour
- 1 1/2 tsp. baking powder
- 1/4 tsp. salt
- oil (for deep fat frying)
Method
- In a mixing bowl, beat eggs.
- Add potatoes.
- Combine flour, baking powder and salt; stir into potato mixture.
- In large saucepan or kettle, heat about 1-inch of oil to 375°.
- Drop by heaping teaspoonfuls, 4 or 5 at a time, into hot oil.
- Fry 2 to 3 minutes, turning once, or until golden brown.
- Watch closely, since they brown quickly.
- Drain on paper towels.
- Serve immediately.
- Yield:
- 1 1/2 to 2 dozen.
