Ingredients

  • 2 eggs
  • 1 c. mashed potatoes
  • 1/2 c. flour
  • 1 1/2 tsp. baking powder
  • 1/4 tsp. salt
  • oil (for deep fat frying)

Method

  • In a mixing bowl, beat eggs.
  • Add potatoes.
  • Combine flour, baking powder and salt; stir into potato mixture.
  • In large saucepan or kettle, heat about 1-inch of oil to 375°.
  • Drop by heaping teaspoonfuls, 4 or 5 at a time, into hot oil.
  • Fry 2 to 3 minutes, turning once, or until golden brown.
  • Watch closely, since they brown quickly.
  • Drain on paper towels.
  • Serve immediately.
  • Yield:
  • 1 1/2 to 2 dozen.
