Ingredients

  • 2 tablespoons olive oil
  • 1 each onions chopped
  • 1 clove garlic chopped
  • 2 cups potatoes cooked, cubed
  • 2 cups chicken smoked, diced
  • 1 tablespoon red hot pepper sauce
  • 1 teaspoon red hot pepper sauce
  • 2 tablespoons milk or yogurt
  • 1 x salt to taste
  • 3 tablespoons coriander fresh

Method

  • Heat oil in non-stick skillet.
  • Add onion and garlic; cook gently until tender.
  • Add potatoes; increase heat and brown lightly.
  • Add chicken and mash together slightly with potatoes.
  • Mash in Tabasco sauce and milk or yogurt.
  • Season with salt.
  • Add coriander.
  • Taste and adjust seasonings if necessary.
