Ingredients

  • 6 12 roast, boneless
  • 2 large onions
  • 12 cup brown sugar
  • 13 cup soy sauce
  • 13 cup cider vinegar
  • 2 bay leaves
  • 2 -3 garlic cloves, minced
  • 1 teaspoon grated ginger
  • 1 cup julienne cut carrot
  • 2 cups sliced mushrooms
  • 2 -3 cups fresh spinach leaves or 20 ounces frozen spinach, defrosted
  • 2 tablespoons cornstarch

Method

  • 1 place meat, topped with onions in slow cooker.
  • 2 combine brown sugar, ginger, garlic, soy sauce and vinegar.
  • pour over vinegar.
  • 3 cover.
  • Cook on high 6-7 hours.
  • 4 spread carrots, mushroom and spinach over beef.
  • 5 cover.
  • Cook on high 20 minutes.
  • 6 mix cornstarch with 1/2 cup broth from slow cooker.
  • 7 cover.
  • Cook 10 minutes more.
  • 8 serve over rice.
