Ingredients

  • 1/4 cup lemon juice
  • 1/4 cup soy sauce
  • 1/2 tsp. ground ginger
  • 1/2 tsp. garlic powder
  • 1 lb. cubed pork
  • 2 tsp. peanut oil
  • 1 lg. onion, diced
  • 1 lg. carrot, sliced
  • 1 cup broccoli florets
  • 1 can (15) sliced peaches, with juice
  • 1 tbsp. all purpose flour

Method

  • In a glass bowl, combine the lemon juice, soy sauce, ground ginger, and garlic powder.
  • Place the pork in the bowl, cover and refrigerate for several hours or overnight.
  • Heat the oil in a wok over medium-high heat.
  • Add the pork, marinade and onion and cook, stirring constantly, until the meat is cooked through.
  • Throw in the carrot and broccoli and cook for a few minutes, then add the peaches with juice and bring the mixture to a boil.
  • Sprinkle the flour over the mixture and stir in.Cook, stirring, until the sauce thickens.
  • Serve over hot rice or noodles.
