- 1/4 cup lemon juice
- 1/4 cup soy sauce
- 1/2 tsp. ground ginger
- 1/2 tsp. garlic powder
- 1 lb. cubed pork
- 2 tsp. peanut oil
- 1 lg. onion, diced
- 1 lg. carrot, sliced
- 1 cup broccoli florets
- 1 can (15) sliced peaches, with juice
- 1 tbsp. all purpose flour
Method
- In a glass bowl, combine the lemon juice, soy sauce, ground ginger, and garlic powder.
- Place the pork in the bowl, cover and refrigerate for several hours or overnight.
- Heat the oil in a wok over medium-high heat.
- Add the pork, marinade and onion and cook, stirring constantly, until the meat is cooked through.
- Throw in the carrot and broccoli and cook for a few minutes, then add the peaches with juice and bring the mixture to a boil.
- Sprinkle the flour over the mixture and stir in.Cook, stirring, until the sauce thickens.
- Serve over hot rice or noodles.
