Ingredients

  • 6 loin pork chops (boneless)
  • 1 c. minced onions
  • 1 (1 pound 12 ounce.) can Italian tomatoes, undrained
  • 1/2 teaspoon dry oregano leaves
  • 1 lg. green pepper
  • 1 (4 ounce.) can button mushrooms, liquid removed
  • 2 tbsp. extra virgin olive oil
  • 1 clove garlic, crushed
  • 1 teaspoon salt
  • 1/2 teaspoon dry basil leaves
  • 1/8 teaspoon pepper

Method

  • Wipe chops with damp paper towels.
  • In warm oil in large skillet, brown chops well on both sides.
  • Remove from skillet.
  • Drain all but 1 Tbsp.
  • drippings from skillet.
  • Add in onion and garlic; saute/fry till onion is tender, about 5 min.
  • Add in tomatoes, salt, oregano, basil and pepper.
  • Mix well, mashing tomatoes with fork.
  • Place pork chops in skillet, add in green pepper, cut in pcs.
  • Simmer, covered 1 1/4 hrs or possibly till chops are tender.
  • Add in mushrooms, and simmer 5 min longer.
