Ingredients

  • 4 cups dried pinto beans
  • 4 slices thick slab bacon, cut into 1 inch slices
  • 1 teaspoon salt
  • 2 teaspoons black pepper
  • chili powder
  • cayenne pepper
  • garlic powder
  • oregano
  • sour cream
  • fresh cilantro
  • chopped red onion
  • grated cheese
  • pico de gallo

Method

  • Rinse beans well and place in a large pot with the bacon; pour water over the top.
  • Use enough water to cover the beans by 1-2 inches.
  • Bring to a boil over med-high heat, reduce heat to low and cover; simmer 2-3 hours.
  • If liquid seems to evaporate to quickly, add more water during cooking process.
  • Beans are done when tender without much bite to them.
  • Add salt and pepper, stir, and taste.
  • Adjust seasonings as necessary, add in other seasonings as desired.
  • Serve with garnishes of choice.
