Ingredients

  • 1 large can pineapple chunks, drained (reserve juice)
  • 3 Tbsp. flour
  • 3/4 c. sugar
  • 3 Tbsp. pineapple juice
  • 1 c. grated Cheddar cheese
  • 1 1/2 c. crushed Ritz crackers
  • 1 stick margarine or butter, melted

Method

  • Arrange pineapple in small casserole.
  • Mix flour, sugar and juice to make a paste.
  • Pour over pineapple and stir.
  • Put cheese over pineapple mixture and stir.
  • Melt butter and mix with crackers; spread over casserole.
  • Bake for 25 to 30 minutes at 350° until golden brown and bubbly.
