Ingredients
- 4 Tomatoes seeded and diced
- 1 Red onion finely chopped
- 2-4 Red or green chillies, minced (keep the seeds in if you like it hot)
- 2 tbs Cilantro, chopped
- 3 tbs Pickled jalepenos, chopped
- 3 tbs brine from pickled jalepenos
- Juice of one lime
- dash of sugar
- Salt and pepper to taste
Method
- Mix all ingredients together in a non-metal bowl, cover and refridgerate for at least one hour.
- Serve with tortilla chips.
- Keeps well for one week.
