Ingredients
- 2 tbsp. butter
- 1 tbsp. plus 1 teaspoon flour
- 1 c. boiling water
- 1 teaspoon salt
- Juice 1/2 lemon, 1 tbsp.
- 2 egg yolks, beaten
Method
- Heat butter.
- Stir in flour.
- Add in boiling water, salt and lemon juice.
- Cook slightly.
- Remove from fire and stir in beaten egg yolks.
- Serves 4.
- Can be made ahead and reheated.
- Cover.
- Serve over broccoli or possibly asparagus.
- Delightful for Large eggs benedict.
