Ingredients
- 3 eggs
- 1/2 c. light corn syrup
- 1/4 tsp. cinnamon
- 1/2 tsp. vanilla
- 2 Tbsp. soft butter or margarine
- 1/2 c. heavy cream
- 1/4 tsp. salt
- 1 c. sugar
- 1 1/2 c. pecans (about 6 to 7 oz.), cut into small pieces
- 1 unbaked 9-inch pie crust
Method
- Put all ingredients, except pecans and pie shell, in blender or processor.
- Mix until thoroughly well blended.
- With spoon, combine mixture and pecans.
- Pour mixture into pie shell.
- Bake at 400° for the first 5 minutes, then at 325° for 50 to 55 minutes. Pie is done when springy to touch.
- It firms up as it cools.
