Ingredients

  • 3 eggs
  • 1/2 c. light corn syrup
  • 1/4 tsp. cinnamon
  • 1/2 tsp. vanilla
  • 2 Tbsp. soft butter or margarine
  • 1/2 c. heavy cream
  • 1/4 tsp. salt
  • 1 c. sugar
  • 1 1/2 c. pecans (about 6 to 7 oz.), cut into small pieces
  • 1 unbaked 9-inch pie crust

Method

  • Put all ingredients, except pecans and pie shell, in blender or processor.
  • Mix until thoroughly well blended.
  • With spoon, combine mixture and pecans.
  • Pour mixture into pie shell.
  • Bake at 400° for the first 5 minutes, then at 325° for 50 to 55 minutes. Pie is done when springy to touch.
  • It firms up as it cools.
