Ingredients

  • 2/3 c. olive oil
  • 1/4 c. red wine vinegar
  • 1/4 c. lightly packed fresh basil leaves, chopped
  • 2 Tbsp. capers
  • 1 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1 clove garlic, crushed
  • 4 medium-size tomatoes
  • 2 medium-size cucumbers
  • 1 large yellow pepper
  • 1 medium red onion
  • 1 (12 oz.) loaf Italian bread
  • 1/2 c. Kalamata olives
  • fresh basil sprig (for garnish)

Method

  • In a large bowl, mix olive oil, vinegar, basil, capers, salt, pepper and garlic.
  • Cut tomatoes, cukes, yellow pepper and red onion into bite-size pieces.
  • Add vegetables to bowl with dressing; toss well.
