Ingredients

  • 12 double graham crackers
  • 2 cups miniature marshmallows
  • 1/2 cup brown sugar, firmly packed
  • 1/2 cup butter
  • 1 tsp. vanilla extract
  • 1 cup peanuts, coarsely chopped

Method

  • Pre-heat oven to 350F.
  • Line jelly roll pan (15x10x1-inch) with graham crackers; sprinkle evenly with marshmallows.
  • In a small saucepan, melt brown sugar and butter together over medium heat.
  • Bring to boil and cook until mixture thickens (about 5 minutes), stirring constantly to prevent burning.
  • Remove from heat and stir in vanilla.
  • Pour evenly over marshmallows, and then sprinkle with peanuts.
  • Bake at 350F for 8 minutes until lightly browned.
  • Cool completely in pan and then cut into squares.
