Ingredients
- 1/2 c. oleo
- 1/2 c. peanut butter
- 1/2 c. brown sugar
- 1/2 c. sugar
- 1 egg
- 1/2 tsp. vanilla
- 1 1/4 c. flour
- 3/4 tsp. baking soda
- 1/2 tsp. salt
Method
- Cream the first 4 ingredients together.
- Beat in the egg and vanilla.
- Sift together the flour, baking soda and salt and add to creamed mixture to make dough.
- Shape into 1-inch balls and place in ungreased 1 1/2-inch muffin tins (or lined with papers).
- Don't spread dough in cups.
- Just sit ball in.
- Bake at 350° for 8 to 10 minutes or until lightly browned.
- Remove from oven and immediately press in peanut butter cup in center until only top of peanut butter cup shows (one 10 ounce box cups).
- Let cool in tins 10 to 15 minutes, then remove.
- Freeze or store in airtight containers. Makes 40 cookies.
