Ingredients

  • 1/2 c. oleo
  • 1/2 c. peanut butter
  • 1/2 c. brown sugar
  • 1/2 c. sugar
  • 1 egg
  • 1/2 tsp. vanilla
  • 1 1/4 c. flour
  • 3/4 tsp. baking soda
  • 1/2 tsp. salt

Method

  • Cream the first 4 ingredients together.
  • Beat in the egg and vanilla.
  • Sift together the flour, baking soda and salt and add to creamed mixture to make dough.
  • Shape into 1-inch balls and place in ungreased 1 1/2-inch muffin tins (or lined with papers).
  • Don't spread dough in cups.
  • Just sit ball in.
  • Bake at 350° for 8 to 10 minutes or until lightly browned.
  • Remove from oven and immediately press in peanut butter cup in center until only top of peanut butter cup shows (one 10 ounce box cups).
  • Let cool in tins 10 to 15 minutes, then remove.
  • Freeze or store in airtight containers. Makes 40 cookies.
