Ingredients

  • 1/4 lb broccoli, broken into florets (about 1 1/3 cups)
  • 2 1/8 oz dry pasta
  • 1 tbsp oil
  • 1/4 lb mushrooms, sliced
  • 2 None spring onions, sliced
  • 1 tbsp sour cream
  • 1 tbsp Parmesan cheese, grated

Method

  • Cook the broccoli in 1/2 cup boiling salted water for about 8 mins. Drain, reserving the cooking water. Cook the pasta according to the packet instructions.
  • Heat the oil in a pan, fry the mushrooms and spring onions. Stir in the broccoli cooking water and bring to a boil, then stir in the sour cream and season. Add the broccoli to the sauce. Serve with the pasta, sprinkled with the Parmesan.
