Ingredients

  • 3 Tbsp. olive oil
  • 1 head cauliflower
  • 1 small can tomato sauce
  • 1/2 c. onion
  • 2 basil leaves
  • salt and pepper
  • pasta (for mixture to be served on top)

Method

  • Heat oil, place cuts of cauliflower in olive oil and brown lightly.
  • Remove when brown, saute onion.
  • Add tomato sauce.
  • Stir and replace cauliflower into pot.
  • Stir and add 3 cans of water (from tomato can).
  • Water should cover cauliflower in pot.
  • Add salt and pepper and basil leaves.
  • Cook until cauliflower is tender, 45 minutes to 1 hour, on low heat with cover on.
  • Pour over pasta.
