Ingredients

  • 2 1/4 cups all purpose flour
  • 3 teaspoons baking powder
  • 2 tablespoons granulated sugar
  • 3/4 cup milk
  • 2 eggs
  • 6 1/2 tablespoons butter melted
  • berries Poached
  • 1/2 cup granulated sugar
  • 3 1/2 ounces raspberries
  • 3 1/2 ounces blueberries
  • 2 ounces strawberries hulled, quartered
  • 1 teaspoon vanilla extract
  • heavy cream or yogurt, to serve, optional

Method

  • Sift flour and baking powder into a large bowl. Add sugar. Whisk together milk, eggs and 4 1/2 tbsp butter then whisk into dry ingredients. Cover and set aside for 15 mins.
  • Meanwhile, to make poached berries, bring 1/2 cup water and sugar to a boil. Add berries. Cook for 1 min. Strain liquid into a clean saucepan. Simmer for 15-20 mins, until syrupy. Let cool slightly then add berries and vanilla.
  • Heat a large nonstick frying pan over medium heat. Brush with butter. Pour 1/4-cupfuls of batter into pan and cook for 2-3 mins, until bubbles appear on the surface. Flip and cook for another 1-2 mins, until golden. Cover to keep warm. Repeat with remaining butter and batter.
  • Serve pancakes in a stack, drizzled with poached berries and heavy cream or yogurt, if desired.
