Ingredients

  • 4 whole Medium Potatoes
  • 4 whole Medium Size Yellow Onions
  • 3 Tablespoons Butter
  • 1-1/2 teaspoon Salt
  • 1 Tablespoon Dill

Method

  • Wash and thinly slice the potatoes. Peel and thinly slice the onions. Melt the butter in a wide deep skillet (cast iron is really nice for this), layer the potatoes on the bottom of the pan, and sear until the potatoes take on a golden hue. Flip the potatoes and add the onions, salt, and dill. Cook until potatoes are tender, about 20 minutes.
  • If dill is not on hand, rosemary is an excellent substitute.
