Ingredients

  • 8 chicken breast halves
  • 1 tsp. salt
  • 2 (10 oz.) pkg. broccoli
  • 1 (10 1/2 oz.) can cream of chicken soup (undiluted)
  • 1/2 c. sour cream
  • 1/2 c. mayonnaise
  • 2 Tbsp. dry sherry
  • 1 tsp. paprika
  • 1 tsp. prepared mustard
  • 1/4 tsp. curry powder
  • 1/3 c. grated Parmesan cheese
  • additional paprika for top

Method

  • Combine chicken and salt.
  • Cover with water.
  • Cook until done. Remove skin and bones.
  • Coarsely chop and set aside.
  • Cook broccoli; drain and arrange in baking dish.
  • Combine next 7 ingredients.
  • Spoon half over broccoli.
  • Arrange chicken over sauce.
  • Top chicken with remaining sauce.
  • Cover and refrigerate overnight.
