Ingredients

  • 1 medium eggplant, peeled and cubed
  • 2 eggs, beaten
  • 1 small onion, chopped
  • salt and pepper to taste
  • 1/4 c. milk
  • 1/2 c. cracker crumbs
  • 2 Tbsp. butter, melted
  • buttered bread crumbs (for topping)

Method

  • Boil eggplant until tender; drain and mash. Add eggs, onion, salt, pepper, milk, crumbs and butter. Mix well and pour into buttered casserole. Sprinkle top with buttered crumbs and bake 25 to 30 minutes in a 350° oven. Makes 6 to 8 servings.
