Ingredients

  • 6 chicken thighs
  • 1/2 cup orange maramalade
  • 1/8 cup soy sauce
  • 2 tbsp. honey
  • 2 tbsp. fresh minced ginger
  • 3/4 cup sliced almonds
  • Black pepper

Method

  • Preheat oven to 375F.
  • In a small mixing bowl, combine the marmalade, soy sauce, honey, black pepper and minced ginger, and mix well.
  • Place the chicken thighs in a shallow baking or casserole dish, skin side up.
  • Coat each with the marmalade mixture and top with sliced almonds.
  • Bake uncovered, occasionally basting the chicken, at 375F for approximately 25-28 minutes or until the internal temperature reaches 180F.
