Ingredients

  • 1 stick butter
  • 1/4 cup sugar
  • 1/2 teaspoon vanilla
  • 1 cup flour
  • 1/4 cup potato chips crushed
  • 1 tablespoon nuts chopped, optional
  • 1 tablespoon chocolate chips optional

Method

  • Bring butter to room temperature (about 45 minutes to an hour). Using a wooden spoon, cream butter and sugar together. Scrape down the sides of bowl with rubber spatula. Stand mixer can be used.
  • Add in vanilla and flour.
  • Mix in potato chips and, if using, nuts and chocolate chips.
  • Preheat oven to 350 degrees.
  • Dough can be rolled out and cut with cookie cutters or dropped by teaspoons onto an ungreased cookie sheet.
  • Bake for 13-15 minutes.
  • Let cool. Cookies can be dipped in melted chocolate for an added treat.
  • Note: Dough can be colored with food coloring before baking for holidays.
