Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 3/4 cup sugar
  • 1/3 cup Land O Lakes Butter, softened
  • 2 Land O Lakes Eggs
  • 2 teaspoons freshly grated lemon zest
  • 1 medium (1 cup) apple, cored, peeled, finely chopped
  • 1/4 cup sugar
  • 1/4 cup sliced almonds

Method

  • Heat oven to 375F.
  • Grease or line muffin pan cups with paper baking cups; set aside.
  • Combine flour, baking powder, salt and cinnamon in bowl.
  • Set aside.
  • Combine sugar and butter in bowl.
  • Beat at medium speed, scraping bowl often, until creamy.
  • Stir in eggs and lemon zest.
  • Continue beating, scraping bowl often, until well mixed.
  • Stir in flour mixture just until moistened.
  • Gently stir in apples.
  • Spoon into prepared muffin pan.
  • Sprinkle sugar and almonds evenly on top of each muffin.
  • Bake 18-22 minutes or until lightly browned.
  • Let stand 5 minutes; remove from pans.
