Ingredients

  • 4 cups old-fashioned oats (about a pound)
  • 1 1/3 c (6 oz) raw pistachios
  • 2 cups (6 oz) sliced almonds
  • 1 cup maple syrup
  • 1/3 cup unsweetened applesauce
  • 1/3 cup oil (olive or canola)
  • 1 teaspoon kosher salt
  • 1 teaspoon cinnamon
  • 1 cup dried cranberries

Method

  • Preheat oven to 300
  • Combine oats and nuts in large bowl
  • In 2 cup glass measuring cup combine maple syrup, applesauce, oil, salt and cinnamon
  • Pour over dry ingredients in bowl and mix to combine
  • Spread on 2 half sheet pans lined with parchment paper or silpat liners
  • Bake 25 minutes, stir, switch the pan positions top to bottom, and bake another 20 minutes
  • Cool completely, then transfer to large bowl, add cranberries and stir
  • Store in air-tight container
